Go-to Lunch Box Cookies

Cookies are my kryptonite. Tough to have just one. But with these I don’t feel bad about having a few more. As I mentioned in the previous post there are some go-to snacks that the whole family will eat. One I use frequently I found on the side of a bag of flour at The Fresh Market. I’m not a recipe developer and there are plenty of blogs that do this far better than me, but I adapted this recipe to my needs. You can adjust it to use up whatever dried fruit, nuts or trail mix you need to use up. I also really like that you can reduce the sugar in it with not much change in taste.

1 cup softened unsalted butter

3/4 cup sugar ( can use brown or white, I try to use turbinado sugar or evaporated cane juice)

1 tsp ground cinnamon

1 tsp vanilla or almond extract

1/2 tsp baking soda

1/2 tsp salt

1 large egg

1 1/2 cups flour (can be AP but I try to stick to white whole wheat)

1 1/2 cups oats

now for the good stuff!

1/2 cup ground flax seed

1/4 cup chia seed

and 1 cup to 1 1/2 dried fruit of your choosing (apples, blueberries, mango you name it!)

1/2 to a 1 cup nuts of your choosing

1/4 cup of chocolate or 3-4 snack size candy bars chopped

Beat together butter, sugar, cinnamon, extract, baking soda and egg

Mix in flour, oats, flax, and seeds             cookies 005

Let rest for 30 minutes then spoon large mounds on a greased baking sheet.

Bake at 350 for 10-12 minutes

You can also add in shredded coconut, leftover trail mix, sprinkles, cocoa powder, PB2 powder, sunflower seeds, the possibilities are endless. I think you might be able to substitute half of the butter for coconut oil but I have not tried that yet. Will have to try that with my next batch and let you know. Hope you enjoy it!
