Chocolate Waffles

chocolate wafflesI have been on kind of a waffling kick lately. It started off with just regular waffles and they were so quick, surprisingly easy to make that I decided to try making waffles out of other ingredients. I experimented and came up with coconut sweet potato waffles. Now I have chocolate waffles. These are still pillowy and soft with nice crispy edges and have a subtle chocolate flavor which is not too overpowering.

But these waffles are for more then just breakfast. They can also make a fantastic dessert option.  You can cover these in whipped cream and chocolate syrup or fill them with ice cream for a decadent waffle ice cream sandwich.

I have to add this video because I have had this song in my head the entire time I was making Waffles. (Yes I am watching too many of my kids shows!)

  1. Beat eggs until fluffy. Add all other ingredients.
  2. Mix until well combined. Add batter to iron per waffle iron direction. Bake about 5 minutes
  3. Top with chocolate chips, strawberries or powdered sugar if desired.
Recipe Notes

The flaxseed is optional. However, you don't even notice it is in there and you can get some added nutrition. You could also bump up the chocolate flavor by substituting chocolate milk. (Yes I went there.)

These also freezer great so you can double or triple the recipe and save them for another day.

2 eggs

1 1/2 flour ( I use unbleached or whole wheat)

1/2 cup cocoa powder

2 tbsp. flax seed (optional: you don’t even notice it is in there but you can get some added nutrition)

1 3/4 cup milk (**thought you could bump up the chocolate flavor if you used chocolate milk here)

1 snack size cup of apple sauce (I use this in place of oil)

2 tbsp stevia baking blend or granulated sugar

4 tsps. baking powder

1/4 tsp salt

Beat eggs until fluffy. Add all other ingredients. Mix until well combined. Add batter to iron per waffle iron direction. Bake about 5 minutes

Top with chocolate chips, strawberries or powdered sugar if desired.
