The Easiest Dinner You Will Ever Make

I have a thing about wasting food and this  also uses up the ends of the bread loaf that nobody wants to eat. It is also very inexpensive. You can change up the seasoning as you like and even add a bit of hot sauce for a spicy kick. It starts with homemade breadcrumbs. Making homemade breadcrumbs could not be easier. Take the leftover ends of bread loafs, stale crackers, hot dog buns, the crush-up bottom of cereal box leftovers, broken pretzels. All of these are fair game and I have used all of these items as breading. Each creates a different flavor profile and brings something different to the party. Get creative and see what’s left in your pantry.

  1. Tear stale bread and place it in food processor with seasoning, salt and pepper. Pulse until it becomes small crumbs.
  2. Place mustard in shallow bowl. Dump the breadcrumbs on a large plate.
  3. Take chicken strips and pat then dry with a paper towel. Season with salt and pepper.
  4. Then using a brush or the back of a spoon spread mustard over the chicken.

  5. Finally, dredge chicken in homemade breadcrumbs shaking off the excess.
  6. Place chicken on sheet pan coated with cooking spray. Bake in 350 degree oven for 15-20 minutes depending on size of your tenders.
Recipe Notes

My kids like honey mustard but can use whatever kind you prefer. I particularly like this with Dijon.

Be sure to season the breadcrumbs if they are not already flavored. ( For example no additional seasoning needed if you are using something like cheese crackers or BBQ flavored chips.)

For the dipping I like using pie places, they are just shallow enough to allow for even coverage.

 

To make the tenders crispier without the added fat, spray the tops with cooking spray before baking.

  1. That looks like a nice easy recipe. My husband who does quite a bit of our cooking was asking for a recipe for chicken strips like this. He likes mustard, I don’t so we will have to compromise.

4-5 slices of stale-ish bread. (Can use old rolls, ends of the loaf, I have even used stale potato chips, and oat cereal.)

3-4 skinless chicken breasts cut into strips

1/2 cup mustard. My kids like honey mustard but can use whatever kind you prefer.(I had left over yellow mustard from a party sub order.)

Italian, Cajun, Herbs De Province or whatever seasoning mix floats your boat.

Salt and Pepper to taste
