4 Ingredient Cake Cookies

I love cookies!!! What I love even better are cookies with few ingredients and this one is a one bowl wonder. I would love to give the creator of this recipe proper credit. However, this is another one I found on Sparkpeople.com about 7 years ago and I have no idea who the submitter is. I certainly did not invent this recipe but I’m sure glad I found it!

  1. 1 Box cake mix. It can be any variety you would like. devils food, yellow, white, I have even tried spice cake and I would imagine lemon would be pretty good on it’s own.
  2. 2 eggs
  3. 1/3 unsweetened applesauce. To make it quick and easy I just dump in a snack sized cup.
  4. 1/2 cup of chocolate, toffee, or peanut butter chips. Can also use nuts, just go with whatever flavor works with the cake mix you are using.
Combine all ingredients in a bowl, stirring in chips last.
Drop onto backing sheet using 2 spoons. Batter will be sticky, If to thick you can thin it with a little bit of water. Bake at 350 for 10 minutes. They come out fluffy and moist.wpid-20150911_192609-1.jpg
An added bonus is these are low-fat (applesauce used instead of oil) and low in calories with each cookie clocking in at under 50 calories. But really who eats just one cookie. Oh yeah,,, forgot that moderation thing I’m always talking about. Anyhow, enjoy!
